
It's St. Patrick's Day tomorrow - list the three words that first jump into your head...go! Mine are green, Guinness, and ...potatoes. Okay, the potato part is a little bit of a stretch but heh, my mind works in mysterious ways. I'm going to let you in on what that silly mind of mine came up with for a tasty St. Patty's Day side dish worth writing to Ireland about...a twist on the classic stuffed (aka twice baked) potatoes: The Lucky Irish Potato. No, I'm not Irish, but you can kiss me anyway for sharing this tasty dish that makes it easy to be green.
Lucky Irish Potatoes
(for a dozen)
6 large baking potatoes
Bake at 350 degrees for 35 minutes or until soft. Meanwhile, wash and roughly chop one bunch of kale. Once steamed, put it in a processor with 3 cloves of garlic. Pulse until fairly smooth.

Once the potatoes are soft, cut them in half lengthwise and carefully scoop out contents into the processor.
Also add:
6 Tbsp melted butter
6 Tbsp Parmesan cheese
9 Tbsp Sourcream
3 Tbsp
Fines Herbes Seasoning
Salt and Pepper to taste
Beat together and stuff into the potato skins.
Bake at 375 degrees for 25 minutes.
