Spring-time Nettle Noodles

With this dish we demonstrate that nettles have a very useful and delicious usefulness when they aren't stinging us and making us tingle. They are also jam-packed with vitamins and minerals.

Ingredients:
2 quart bag loosely packed fresh nettle tops*
1 to 1 1/2 chole heads of garlic, minced
1 Tbsp peanut oil
2 Tbsp toasted sesame seed oil
1/2 cup peanut butter
3 cups cooked pasta of your choice

Saute the garlic in the two oils. Add the nettles to steam in the garlic pan while the pasta is cooking. Stir in the peanut butter and mix all together over low heat to form a sauce. Add in a little of the pasta water if too thick. Toss the pasta with the sauce and enjoy!

*Harvest only the top 4-6" nettles growing in clean environments. Never harvest when plants are in flower.
