Quinoa (pronounced keen-wa) is an ancient grain. It was called the 'Gold of the Incas' and has been grown in the Andean Mountains since 3000BC. Quinoa Tomato Soup
Over medium heat, saute...
1 Tbsp olive oil
1 jalapeno pepper, minced
1/2 onion, chopped
4 cloves garlic, minced
Add:
4 cups veggie or chicken broth
1 can (28 oz) diced tomatoes, including liquid
1 can (6 oz) tomato paste
1/2 cup rinsed quinoa
1/2 green bell pepper, chopped
1 tsp chili powder
1 tsp cumin
1/2 cup cilantro, chopped
1/2 tsp coriander seed
1/4 tsp black pepper
Juice of a lime
Salt to taste
Simmer 20 minutes or until quinoa is tender. Serve with garlic bread and a glass of red wine.
