Delicous & Simple: Dukkah
Dukkah is a traditional
spice and nut blend of Egyptian origin that is usually used as a dip with bread
or vegetables for an hors d’oeuvre. I first encountered it while wine tasting in
New Zealand and fell in love right away. It’s very simple to make and the warm
flavor is just perfect for holiday entertaining. Put it in a dish alongside
quality olive oil and hearty bread or sprinkle it over green salad. We also like to sprinkle it over side dishes like honey roasted carrots (like we did for our Salmon Celebration). Irresistible!
Ingredients:
1 cup hazelnuts
3 Tbsp sesame seeds
2 Tbsp cumin seed
2 Tbsp coriander seed
1 tsp coarse salt
Toast all the ingredients
except salt until lightly browned. I do this in the toaster oven, but the oven
works too. Pulse all toasted nuts and seeds in the food processor until fine
but be careful because over doing it will make paste! Stir in salt. Dukkah stores
well in an airtight jar.
