Skillet Apple Cake
This gluten free skillet apple cake is adapted from a recipe for apple fritters we've used for years, but instead of making a bunch of little apple cakes (time consuming!) we have put the whole recipe in a skillet with a nice bit of melted butter and it's delicious, and perfect to feed a guest or 5 with tea or coffee!
Ingredients
2 Tbsp butter
2 apples, diced
1 egg, beaten
3/4 cup milk
1 cup Pamela's Gluten Free Pancake & Baking Mix
1/4 tsp salt
1 1/2 tsp baking powder
Powdered sugar for dusting
Heat oven to 350°. Slide the skillet in with the pat of butter to melt. Mix together the dry ingredients, then stir in the milk and egg. Stir to combine then add apples.
Remove heated skillet from oven and pour in batter. Return to oven and bake for 10-12 minutes.
Sprinkle with a generous amount of powdered sugar and serve.
